Yellow Cake

Simple yellow cake that we got compliments about from everyone who tasted it!


Ingredients

  • ¾ cup unsalted margarine, at room temperature
  • ¼ cup oil
  • 2 cups granulated sugar
  • 3 large eggs , at room temperature
  • 2 large egg yolks , at room temperature
  • 1 Tbsp vanilla extract
  • 2½ tsp baking powder
  • 1 tsp salt
  • 2⅔ cups all-purpose flour
  • 1 cup milk (we use coconut or almond milk instead)

Prep Time: 25 minutes
Cook Time: 35 minutes
Total Time: 1 hour

Yield: 1 cake!

Notes

We've made this with both coconut and almond milk rather than real milk, and it's been excellent both times!

Instructions

  1. Preheat oven to 350 degrees F.
  2. Prepare the pan: Place parchment paper in the bottom of two 8 or 9 inch round cake pans. Cut the paper so it fits well in the bottom circle of the pan. Spray the pan and parchment paper with nonstick cooking spray.
  3. In a large bowl, cream the sugar and butter until smooth.
  4. Add oil and mix
  5. Add the eggs and yolks, one at a time, beating after each addition.
  6. Add vanilla and mix.
  7. Stir together baking powder, salt, and flour in a medium bowl. (Or just add the baking powder and salt to the batter and skip to the next step. Fewer bowls to clean!)
  8. Alternate adding in some of the flour mixture, stirring to combine and then some of the milk, ending with the flour mixture until just combined. Divide the batter evenly in the pans.
  9. Bake for 25-35 minutes or until a toothpick inserted into the center of the cake comes out with few moist crumbs, but not wet batter. Don't over-bake or the cake will be dry.
  10. Allow the cake to cool for a few minutes before inverting onto a wire cooling rack to cool completely.
