Spicy Garlic Chicken Pizza

Spicy garlic chicken pizza

Don't worry, it's not that spicy.


Ingredients

  • 1 lb chicken breasts
  • ¾ cup sliced green onion
  • 4–6 cloves of garlic, minced
  • ⅓ cup vinegar
  • ⅓ cup soy sauce
  • 2 Tbsp olive oil
  • ½–1 tsp red pepper
  • 1 tsp black pepper
  • 1 Tbsp olive oil
  • 2 Tbsp cornstarch
  • Pizza dough
  • 1 cup Monterey Jack cheese
  • 1 cup mozzarella cheese
  • ¼ cup sliced or slivered almonds

Cook Time: 15 minutes

Yield: 16" pizza

Instructions

  1. Cut the chicken into small, bite-sized pieces. In a medium bowl, combine half of the green onion, garlic, vinegar, soy sauce, 2 tablespoons olive oil, and pepper. Add the chicken and stir to coat. Let stand to marinate 30 minutes at room temperature. Meanwhile, prepare the pizza dough according to the directions below. After the chicken has marinated, drain the marinade from the chicken and set aside. Heat the remaining oil in a frying pan. Cook the chicken until no longer pink. Add the cornstarch to the reserved marinade. (Cornstarch can’t be added directly to hot liquids or it will become lumpy.) Add the mixture to the pan and cook until thickened and bubbly. Roll out the pizza dough on a floured surface. Place on a pizza pan and top with the chicken mixture. Grate and mix the cheeses, then sprinkle on top of the pizza. Bake for 12 minutes at 400ºF. Sprinkle the almonds and remaining green onions on top of the pizza and bake for and additional 3 minutes. Slice and serve.
