A loaf of meat.


  • 2 lb ground beef
  • 2 cups bread crumbs
  • ½ cup milk
  • ½ cup minced onion
  • 2 eggs
  • 2 tsp salt
  • ¼ tsp pepper
  • ½ tsp oregano
  • Monterey Jack cheese

Cook Time: 1 hour 30 minutes

Yield: 1 loaf


The leaner the ground beef the better; there's nowhere for the excess fat to go.

The finer the bread crumbs, the better the loaf will hold together.


  1. Preheat the oven to 350ºF. Mix all of the ingredients except the cheese in a large bowl. (I started with a wooden spoon before I gave up and kneaded it like a bread loaf.) Spoon half of it into a 9"x5" loaf pan and press flat. Cover with slices of cheese. Flatten remaining meat on top. Bake for 1½ hours. In the last 10 minutes, top with more cheese slices. Let stand for 5 minutes at room temperature after removing the oven. Use a pair of spatulas to lift the meatloaf out of the pan and place top-side up on whatever your serving dish will be.
