Meatloaf
A loaf of meat.
Ingredients
- 2 lb ground beef
- 2 cups bread crumbs
- ½ cup milk
- ½ cup minced onion
- 2 eggs
- 2 tsp salt
- ¼ tsp pepper
- ½ tsp oregano
- Monterey Jack cheese
Cook Time: 1 hour 30 minutes
Yield: 1 loaf
Notes
The leaner the ground beef the better; there's nowhere for the excess fat to go.
The finer the bread crumbs, the better the loaf will hold together.
Instructions
- Preheat the oven to 350ºF. Mix all of the ingredients except the cheese in a large bowl. (I started with a wooden spoon before I gave up and kneaded it like a bread loaf.) Spoon half of it into a 9"x5" loaf pan and press flat. Cover with slices of cheese. Flatten remaining meat on top. Bake for 1½ hours. In the last 10 minutes, top with more cheese slices. Let stand for 5 minutes at room temperature after removing the oven. Use a pair of spatulas to lift the meatloaf out of the pan and place top-side up on whatever your serving dish will be.
