Chicken in Peanut Sauce

This was one of the very first recipes I made from Budget Bytes. I got hooked.


Ingredients

  • 1¾ cups rice (uncooked)
  • 3½ cups water
  • 2 cloves garlic
  • 2 inches fresh ginger
  • 1 Tbsp vegetable oil
  • 1 lb chicken breast
  • 1 large red pepper
  • 1 14-oz. can coconut milk
  • ½ cup natural peanut butter
  • 1 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • ½ tsp sriracha hot sauce

Instructions

  1. Put the rice and water in a pot to boil and cook.
  2. Cut the pepper into half strips and saute. in a large skillet or pot. Remove and set aside.
  3. To begin the sauce, mince the garlic and then peel and grate the ginger into the same pan. Saute both over medium heat for about 2 minutes or until they are soft and fragrant.
  4. Cut the chicken into small pieces (about one inch across). Add them to your skillet or pot. Saute until lightly browned and cooked through (about 10 minutes).
  5. Turn the heat down to low and add the coconut milk and peanut butter. Stir gently to combine the two and dissolve any browned bits off of the bottom of the pan. Once the sauce is relatively smooth, add the soy sauce, brown sugar, and sriracha. Stir to combine and heat through (about ten minutes). Add the pepper back in at the end and serve.
